The tiramisù that never changed

In 2011 Luca came back from a stage in Milan with ideas about tiramisù. There was a foam. There were deconstructed savoiardi.

By August the regulars had complained so much that Rosa’s handwritten recipe went back up on the kitchen wall, where it still is.

“There was a foam. We don’t talk about the foam.”
