Pizza,vinoe sole.
A family pizzeria and wine garden at the edge of our vineyard. Wood-fired pizza, the house red by the carafe, and long tables under the pergola until the light turns gold.
It began with Nonna Rosa's ladle
In 1962 Rosa Bellandi built a wood oven behind the farmhouse and fed whoever climbed the hill to help with the harvest. Sixty-odd years later the oven is the same, the vines are older, and the sauce still goes on the way she did it: from the centre, round and round, never quite to the edge.
Forty-eight hours of pazienza (patience)
Tipo 00 flour from a mill in Molise, water from our own well, a pinch of sea salt and the lievito madre Rosa started before any of us were born. We mix it in the morning and leave it alone in the cool of the cellar for two days. That slow rise is what makes the cornicione light, blistered and a little chewy.
Most of it comes from vicino (nearby)
“My grandmother never measured anything. I spent ten years learning to measure it all, then happily forgot it again.”
Under the pergola
Our wines come from the eight hectares around the garden: a Sangiovese we pour by the carafe, a crisp Trebbiano for hot afternoons and a rosato that rarely lasts past August. The tables sit under the vines from May to October.
